Sushi Pop Restaurant, 310 W. Mitchell Hammock Rd., Oveido, FL

Summertime is here and it’s going to get hot…again!!!!! What are our choices?? Big cabs don’t go well with lighter fare. Sean Griffin and I (Rod Henry) have some solutions. Sean’s energy is contagious. He has an excellent palate and has been selecting wines to pair with food for restaurant customers for 15 years. Some of the wines we’ve selected are typical for summer while others you may not have thought of.

I prefer cooler meals, Sushi or Sashimi for summer as an example. Chef-Owner Chau of Sushi Pop will showcase his modern style of sushi by selecting the best products and ingredients available from local farms, fisheries, and the bustling Toyosu fish market in Tokyo, Japan. This food is meant to be eaten with your eyes first. Every dish is a work of art employing unique spices, herbs and often citrus for each dish.

The menu below focuses on what this restaurant does best, Sushi and Sashimi. However, Chef Chau realizes that some people may not want to try these types of dishes. This chef is graciously providing traditionally cooked food if you select that option at time of reservation. If you want cooked items, indicate so in your reply.

The restaurant will be open afterwards, at our last event many stayed until after 10.

MENU

Greet & Welcome Hors d'Oeuvre - Spicy Tuna Wonton:

Cappelletti Spritz - Cappelletti, Simonet Blanc de Blancs, Soda Water w/Twist - Cappelletti is an aperitif very similar to Aperol in taste. It is wine based instead of gin.

First Course - Simply Suzuki - Striped Bass, umeboshi, ponzu, citrus microgreens:

Szigeti Brut Sparkling of Gruner Veltliner, Austrian n/v - A stunning example of varietal expression in a completely unique presentation. Showcasing everything we love about Gruner Veltliner, but in a sparkler

Suave Monte Carbonare, Soave, Italy, 2020 - Soave perfection - Monte Carbonara is the name of the hill upon which the vineyard that sources this wine is situated. The word Carbonare refers to coal and is used to describe this location because the volcanic soils here are black as coal.

Second Course - Never Let Go (Amber) Jack - house-cured & cold smoked Hiram's, aji verde, Asian pear, la-yu, microgreens:

Chateau de Trinquevedel Tavel Rose, Tavel, France, 2022 - Typically thought of as a winter rose, we're going to think of this Tavel instead as an extremely light summer red! Powerful and elegant for a rose, this wine exemplifies the style.

CVNE Monopole Classico Blanco Seco, Rioja, Spain, 2018 - Quite possibly one of the most unique wines on the face of the planet. A blend of 90% Rioja noble white grape Viura aged on its lees for 8 months (aka Macabeo) and 10% Manzanilla Sherry from Sanlucar de Barameda, Jerez.

Third Course - Crispy Pork Belly, kimchi fried rice, sweet sambal salsa scallions:

Hermann J Weiner Cabernet Franc, Finger Lakes, New York 2020 - A summer red (not named pinot noir or gamey) if there ever was one. Intense yet subtle, the aroma gives raspberry and plum while the palate showcases delightfully integrated tannins alongside the herbaceousness ad green pepper undertones we love from a well-made Cab Franc.

Lini 910 Metodo Classico Lambrusco, Emilia-Romagna, Italy, 2007 - The showstopper of the series and Rod's favorite. A sixteen-year-old Method Champenoise 100% Salamino that shatters the entire category of Lambrusco. Intense dark fruits are carried by exceptional acidity and pronounced yeasty notes from over a decade of lees aging.

To accommodate your desires, don't forget to indicate if you want cooked food when you request a reservation!!!
